Who’s ready for some holiday baking?! I love baking with my kids year-round but at the holidays it’s nice to switch it up and do some special treats for Christmas time. I worked with my friend Kate from Wildflower Superfoods to create five healthy holiday treats that you can make with your little ones. These would make fantastic gifts for friends and neighbours that actually support their health and mood, rather than hindering it!
The best part about these recipes is that they are all free of refined sugars, refined flours, dairy, and gluten. This year, especially, I’m keeping sugar at a bare minimum for my kids. I don’t want them to miss out on school, playdates, or activities because they’re sick. Plus, you might have heard that there’s a virus going around….and keeping their (and my!) immune system functioning at its peak is our strategy for maintaining good health this season.
That’s where these Spiced Crispy Squares come into play! Chewy, perfectly sweet, nutty, and spiced up nice with some Adapt Superfood Powder. It has a chai-inspired flavour which makes these so yummy at this time of year! If you don’t have any Superfood Protein Powder, you can order some here, or make them without. Spiced Crispy Squares | | Print |
- 1 cup smooth natural peanut butter (make sure it is well stirred, and not dried out)
- ½ cup natural honey (creamed or liquid is fine)
- ¼ cup coconut oil
- 1 teaspoon vanilla extract
- ¼ cup Adapt (if not using, then instead add 1 teaspoon of cinnamon, ½ teaspoon each of ground cardamom, ground ginger, and ground nutmeg, + ⅛ teaspoon ground allspice or ground cloves)
- ⅛ teaspoon fine sea salt (omit if peanut butter is salted)
- 3 cups whole grain crisped rice cereal (like crispy rice)
- In a small saucepan, combine everything except the rice cereal and heat gently on low heat, stirring until completely combined.
- Place the cereal in a large mixing bowl, then pour the peanut butter mixture over top.
- Using a spatula, mix thoroughly for a few minutes until all the cereal is completely coated.
- Line a 9 X 11 or 8 X 8 baking dish with parchment paper, then pour the cereal mixture into the pan. Use a spatula to spread it out evenly. Let set in the fridge for at least 3 hours.
- Remove from the pan by lifting the whole batch out with the parchment paper edges. Then cut into small squares and enjoy. Store in the fridge for up to 1 week.
