Superfood Bites. Yep, it’s the new year, and it’s time to kick things up a bit and become a superhero, food wise. I’ll admit, being pregnant over the holidays this year, I allowed myself to….well lets just say, indulge, in holiday treats and chocolates a little more than I would normally have. I told myself I was gonna relax and just enjoy the holidays, which I did, however…it always feels so good to get back to healthy eating. Loosening up on “eating healthy” is always a good reminder of why I like to eat healthy in the first place: More energy, clearer skin, better mood, and an all around feeling of vitality.
Growing a human inside of you is no easy task, so I went to see a holistic nutritionist who specializes in prenatal and postnatal nutrition just to make sure I was getting enough of everything needed to grow the healthiest baby possible and to feel my best during that process. She, Lisa Hewitt, was amazing and gave me some great insight into things I could do to boost my health even further. Included in this was adding some superfoods to my diet. I never really knew how to feel about these trendy little words associated with things like Goji Berries and Coconut Oil, but she gave me so much information about why they really deserve the label, I was totally sold.
Ever since seeing her I have been adding these superfoods (Goji Berries, hemp hearts, cacao nibs, bee pollen, coconut oil, and turmeric, to name a few) to things like smoothies and oatmeal. But it’s sometimes annoying opening up each package, taking everything out of the pantry, day after day. I wanted to find a way to fit a bunch of superfoods into a little grab and go package. Enter, the Prenatal Superfood Bite! And by the way, you don’t have to be pregnant to enjoy the benefits of superfoods.
These little balls travel well, make a great snack when you’re feeling hungry between meals, and I’ve even popped them straight into the blender as part of a smoothie. It’s just nice to know that if I have a few of these per day, I’m on my way to a healthy baby and more energy for me. Plus, they taste pretty good, so no complaints here.
Here’s just a tidbit of the many benefits these Prenatal Superfood Bitess offer. All of the information below is from Lisa Hewitt, Holistic Nutritionist, who has given me permission to share it with you. If you want more information, contact her here or follow her on Instagram. Prenatal Superfood Bites | | Print |
- 2 tablespoons goji berries
- ¼ cup hemp hearts
- 2 tablespoons cacao nibs
- 1 tablespoon bee pollen
- 2 tablespoons coconut oil
- 2 tablespoons nut butter of choice (i.e. peanut butter, almond butter, cashew butter…)
- 4-8 soft pitted Medjool dates*
- ¼ cup rolled oats
- ¼ cup finely shredded unsweetened coconut (optional, for rolling)
- Place all ingredients in a food processor and blend until evenly combined. Roll into 1 inch balls, and then roll into shredded coconut, if using. Set on a baking sheet lined with parchment or wax paper and place in the refrigerater for at least 2 hours to set. Keep refrigerated for up to 2 weeks. You can also freeze them and eat them straight from the freezer!
- Note: If it feels too oily to roll into a ball that will stay together, cover and refrigerate for 1 hour before rolling into balls. The coconut oil will set up when cold making it less “oily.”
