I’ve had a great time testing and perfecting this no-bake brownie recipe. I mean, I pretty much need a chocolate fix on the daily and this is it! Totally feels like a decadent treat but really it’s just an awesome source of some pretty important nutrients.
Cacao is an amazing source of antioxidants, iron, magnesium, and zinc.
Walnuts are amazing brain and mood food; full of Omega-3s which your body doesn’t make so eating them is key!
Dates contain tryptophan, the precursor to the feel-good hormone serotonin, plus iron, calcium and magnesium.
And coconut oil is great for balancing blood sugar, hormone production (your hormones pretty much dictate everything in your body, btw), nervous system support and it helps your body absorb fat-soluble vitamins.
Seriously, there are only great things for you in these brownies so I hope you enjoy them as much as we do!

- 1½ cups raw unsalted walnuts
- 1 packed cup pitted dates
- ¼ cup raw cacao powder (may sub cocoa powder or carob powder)
- 1 tablespoon melted coconut oil
- pinch of sea salt (optional)
- Process walnuts and dates together in a food processor until you've got a crumbly and sticky mixture.
- Add the cacao, coconut oil, and sea salt and process again until evenly combined. The mixture should stick together when you press it between your fingers.
- Pack the mixture into a parchment lined loaf pan or similarly small-ish container and let chill in the fridge for 3 hours to set.
- Lift the parchment paper out of the pan and cut into small squares.
- Store in the fridge for up to 2 weeks in an airtight container.
