Wouldn’t it be so nice to start each day with a cold-pressed green juice?! Unfortunately buying one every day is not in my $ budget right now and getting my own juicer and cleaning it out every day is just not in my time budget right now. Ah.. maybe one day I’ll have peaceful mornings back. hah! Plus, I just don’t think I can handle another appliance on my counter… whose with me?!
So no juicer and no green juice, BUT-I’ve come up with a legit amazing solution and you guys, I am hooked. I threw together everything I’d put in my hypothetical morning green juice and blended away. The outcome… delish. It tastes like “health,” if that makes any sense-hah! A little earthy, A little zingy, tart and just slightly sweet. If you like your green juice extra green, you’re gonna love this too! The best part is that Liam and James both seem to like this smoothie the best too! Maybe kids have less of a sweet tooth than I thought!

p.s. This makes a LARGE smoothie, but it’s great for sharing with your kids, or sipping on all morning if that’s all you’re having for breakfast!

- 1½ cups water, plus more for thinning
- 2 tablespoons lemon juice
- 3 large handfuls of spinach
- 1 cup roughly chopped cucumber
- 1 small knob of ginger (about ½ an inch)
- 1 handful of parsley leaves
- 1 teaspoon spirulina powder
- 2 cups frozen mango cubes
- 2 tablespoons ground flaxseed (optional)
- 2 tablespoons collagen (optional)
- Combine everything in your blender. I find it best to put liquids in first! Then blend until smooth, adding more water if you want it thinner. Best enjoyed right away!
