Cilantro Sauce

The Crossroads Farmers Market in Calgary has this little Mexican food booth with the most amazing dips and salsas. There’s such a variety too! I’m talking coconut salsa, corn salsa, super freaking hot ones, and my absolute favourite, the cilantro salsa. It’s more of a cilantro sauce, with a smooth and creamy texture. I get one every time I go…and then dip everything in it and make tacos every night until it’s gone. What!? It’s seriously so good! If you’re from Calgary, go find it! The owner is just the nicest little man as well!

After several purchases I finally asked the guy “what’s in this!?” He said there were 17 different ingredients but no dairy and no gluten. Hm… not quite the spill-all I was hoping for. But it did make me feel better that it was dairy free! I slugged home with my dips in hand and decided I’d just be coming back forever.

That is, until it was a Monday and I really wanted to make these Mexican Sweet Potato Boats but I knew they needed a sauce. And the farmers market is only open Thursday-Sunday. So… I had to figure it out. And, although it’s not exactly the same, it’s still pretty darn close and pretty darn good. For any cilantro lovers out there, this is your sauce! And the best part, it’s nowhere near 17 ingredients. Just 5 actually, two of which are salt and water. So yeah, much simpler!
