Here’s your new go-to toddler treat for summer! And it’s completely naturally sweetened with the goodness of cherries. Feel free to switch up the fruit too. Ripe juicy peaches or mango would also be great here!
When it comes to “special treats” as we call them, I am totally OK with the occasional summer time ice cream shop stop, but on a daily basis, we stick with the healthier treats. Since this one is so simple and full of healthy fats that are perfect for little ones, I have no problem saying “ok…just ONE more…!”
Let me know if your toddlers like these as much as mine did! Leave a comment or post a picture of your cutie on instagram and don’t forget to tag me! I want to see that messy face! On that note…these are best enjoyed outside to avoid getting cherry stains all over your house!
Cherry Lime Popsicles | | Print |
- 1 cup full fat coconut milk (from a can)
- 1 cup frozen cherries (measured frozen, then defrost and reserve juices)
- juice of half a lime
- optional: raw honey or maple syrup (not necessary for toddlers but if you're making this for yourself, you might want it sweeter!)
- Defrost cherries (leave out on the counter for an hour or two)
- Combine defrosted cherries and all their juices, coconut milk and lime juice in a blender.
- Blend until evenly combined.
- Taste and adjust: For more tartness, add more lime juice. For more sweetness, add a teaspoon or two of maple syrup or raw honey (don't give honey to kids under 1 year!)
- Once you've got it where you want it, pour into popsicle molds and freeze.
- Enjoy!
